Avocado Chicken Salad

I don’t always make sweet recipes, I swear! Sometimes I can get creative with the savory which helps me prep for the week (which reminds me I still need to do a meal prep guide.) This is definitely an older recipe of mine, but I’m constantly remaking it and having fun with the optional add ins. I’ll keep this short and simple so you can have avo chicken salad any time of the week. Hope you guys enjoy!

 

Avocado Chicken Salad
  • 3 cups shredded chicken*
  • 1 mashed avocado
  • 2-3 tablespoons dairy free yogurt (I use Forager Project unsweetened cashew yogurt)
  • 1 tablespoon dairy free cream cheese (I use Kite Hill plain cream cheese)
  • 1/2 lemon juice
  • 1 medium finely chopped cucumber
  • Finely chopped green onion
  • sprinkle in: garlic powder, salt, pepper, and chili powder

*Poach about three medium chicken breasts. After the chicken is cooked through (check by opening one in the middle) simply use two forks and shred the chicken. This ensures the most fresh shredded chicken!

Hope y’all enjoy this recipe! You can totally make it your own by adding in your choice of seasoning or extra ingredients. I love a good crunchy addition like maybe some finely chopped bell pepper or sweet red onion. If something in my recipe doesn’t make sense, just comment and let me know! I’ll try my best to help.
