Double Chocolate Cookie Truffles

  1. Combine all ingredients except the chocolate bar into a food processor and mix until smooth

  2. Roll into balls and cool in the fridge for about 30 minutes

  3. Melt chocolate bar while the balls are cooling and then use a spoon to cover the balls on all sides

  4. Sprinkle crushed peppermint and a little salt before they’re cooled completely and then let harden in the fridge

  5. Store in the fridge! Just pop one out when you’re ready to eat it!
