No Bake Chocolate Oatmeal Tahini Bars

I love tahini, I love chocolate, and I love oatmeal so I figured nothing could go wrong if I combined them. Turns out I was right and I made a sweet treat full of soft oatmeal cookie layer and creamy tahini fudge. The recipe is super simple and easy and it’s gluten free, dairy free, soy free, and refined sugar free. You can sub the maple syrup for any other sweetener if you want it. Happy eating friends!

Ingredients:

For the Oatmeal Layers:

  • 1 and 1/2 cup oats
  • 1 cup oat flour
  • 1 tsp cinnamon
  • 1/2 cup applesauce
  • 2 tbsp maple syrup
  • pinch sea salt

Tahini Layer:

  • 1/2 melted chocolate bar
  • 1/2 cup tahini
  • 2 tbsp cacao powder
  • 3 tbsp maple syrup

Recipe:

  1. Create the oatmeal layers! Mix together the ingredients for the oatmeal to create a thick dough. You should be able to mold the dough without it falling apart or sticking to your hands
  2. Once you have the dough, separate it into two even halves and press one half of the dough into a lined rectangle container. I used a smaller glass Tupperware so that the oatmeal layer would not be too thin. Let this layer chill in the freezer while you make the tahini layer
  3. Mix together the ingredients for the tahini layer! You can taste this batter and make sure it’s sweet enough! The tahini can be overpowering, so make sure the flavor isn’t too strong for you. If you find that it is, add a little extra maple or honey
  4. Gently pour the tahini mixture on top of the first layer of chilled oatmeal and flatten it out using the back of a spoon
  5. Let this layer freeze for about 30 minutes
  6. Once it’s mostly hardened, add the other half of oatmeal on top and press it flat. Be gentle so that you don’t press into the tahini layer
  7. Let this chill overnight, slice, and enjoy! Drizzle with a little chocolate on top for extra chocolate goodness 🙂
