Smores Blondies

Whenever I see anything s’more related, it reminds me of my childhood. I grew up a Girl Scout and I can always think back to campfires and s’mores. I remember sitting around with my friends and eating upwards of 4 or 5 s’mores and then, on a sugar rush, staying up half the night telling ghost stories. While my Girl Scout days are long over, my s’mores days definitely are not. There is seriously nothing better than melted marshmallow, on melted chocolate, on a sweet graham cracker. I’ve obviously had to modify a little and make my own versions these days with dairy free chocolate and gluten free graham crackers, but I think I’ve made it work pretty well!

Feeling inspired by all these memories lately, I’ve been making all the s’mores themed desserts. This was the first of many 🙂 I made a flourless blondie topped with all the s’mores bests. It’s a recipe that was gone before I could even put it in the fridge. It may be one of the best things I’ve ever made. As an added bonus, its gluten free and diary free and you would never know it!   • 1 cup cashew butter
  • 1/3 cup honey
  • 1 and 1/2 tsp vanilla
  • 1 egg
  • 1/4 tsp sea salt
  • 1/4 cup applesauce
  • 1/2 tsp baking soda

For the top:

  • 1/3 cup mini marshmallows
  • 1 crumbled up chocolate bar



  1. Mix all the ingredients together in one bowl and stir well to create an even batter
  2. Pour the mixture into an 8×8 lined brownie tray (don’t add the toppings yet) and bake at 350 for 25 minutes (they should not be fully baked just yet)
  3. At the 25 minute mark, take out the blondies and top with the mini marshmallows and crumbled up chocolate bar
  4. Place the baking dish back in the oven and bake for another 7-9 minutes to allow the chocolate to melt and the marshmallows to roast a little
  5. Right before you take them out, broil for about 1 minute or until the mini marshmallows are brown
  6. Let cool, top with a pinch of sea salt, and enjoy!
