Vegan Brownie Sprinkle Cookies

gluten free, dairy free, vegan, and super easy to make! Both crispy and soft 🙂

Ingredients

  • 1 cup chocolate almond butter
  • 1/2 cup coconut sugar
  • 1/4 cup and 2 tbsp tapioca flour
  • 1/4 cup almond milk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 1/3 cup sprinkles

Instructions

  • Combine all wet and dry ingredients in one bowl (except the sprinkles) and mix super well. The dough should be thick, easy to mold, but maybe slightly sticky
  • Use a cookie scoop to measure out even sized balls of dough and roll them into smooth balls
  • Pour the sprinkles onto a plate and roll each dough ball on the sprinkles. The sprinkles should evenly coat the entire ball
  • Place the balls on a non stick baking sheet. Leave enough room in between each one because they will spread
  • Bake at 350 for about 18-20 minutes, chill, and enjoy!
