Easy to make and probably one of my all time favorite recipes 🙂

Snickerdoodle Loaf

Gluten free, dairy free, refined sugar free!

Servings: 12 slices

Ingredients

  • 1 cup almond flour
  • 3/4 cup brown rice flour
  • 1/2 cup dairy free yogurt
  • 3 tbsp applesauce
  • 2 eggs
  • 1/4 cup maple syrup
  • 2 tsp vanilla
  • 1 tsp baking soda
  • pinch of sea salt
  • 2 tsp cinnamon

Sprinkle on Top

  • 2 tbsp coconut sugar
  • 1 tbsp cinnamon

Instructions

  • Mix all dry ingredients first
  • Add in the wet and stir to create a smooth batter
  • Pour the batter into a lined loaf dish and smooth out the top. Sprinkle the coconut sugar and cinnamon on top
  • Bake at 350 for about an hour or until the inside is cooked fully. Use a toothpick to check the center, if it comes out clean, it's ready!
  • Slice and enjoy 🙂
