What are your favorite go-to savory meals to make? For me, anything warm and cozy goes, which means this creamy feta pasta recipe perfectly fits the bill. The creamy sauce is made with butternut squash, vegan feta, minced garlic, and tons of fresh seasoning. It’s filled with so many intense flavors!

After the feta pasta trend went viral, I knew I had to give it a go. I put my own little twist on it by making it vegan and gluten free of course. I love to whip this together and keep the extras for a fun second-day lunch. It’s one of those recipes that tastes extra yummy on day #2, so it’s perfect for you meal prep kings and queens!

Ingredients included in creamy feta pasta

Creamy feta pasta gets its name from the delicious cream sauce. In addition to the sauce ingredients, the only item you need is your favorite box of gluten free pasta! My go-to is the brown rice rotini pasta from Trader Joe’s.

  • Dried pasta (I use brown rice fusilli)
  • Chopped butternut squash
  • Vegan Feta
  • Garlic
  • Salt & Pepper
  • Thyme
  • Rosemary
  • Parsley
  • Fresh Basil

What you’ll need to create this recipe

When it comes to kitchen tools, this recipe keeps things pretty simple. You’ll need an oven safe dish for the pasta sauce and a pot for the pasta.

  • Oven safe dish
  • Medium pot
  • Strainer
  • Small cutting board/cutting tool
  • Stirring utensil

Additionally, grab measuring for these amounts: 1/4 tsp, 1 tbsp, and 1 cup. That’s all!

How to make creamy vegan feta butternut squash pasta

Though it sounds (and tastes!) gourmet, creamy feta pasta is just as easy to prepare as any other pasta recipe. You’ll start by boiling the noodles, and then you’ll prepare the creamy sauce by simply throwing everything into a dish!

To begin, prepare the pasta according to the package. Drain and set aside. I recommend adding a little olive oil to the cooked pasta to keep it from sticking together.

Next, prepare your sauce dish. In an oven safe dish, place your feta block in the center and pour the butternut squash chunks around it. Drizzle the olive oil right on top.

Add in your garlic, salt and pepper, other seasoning by sprinkling it all on top.

Bake in the oven at 350F for about 50 minutes. You can also bake this at 400F for about 30 minutes.

Once the butternut squash is nice and soft, remove from the oven and add in your fresh, cut up basil. Using a fork, mash everything together to create a nice, creamy sauce. Add in your pasta to the baking dish and mix to coat the noodles.

Serve up with a little more fresh basil and enjoy 🙂

Add protein to fill you up

Want to add something extra to your creamy feta pasta? Add protein!

Ideas include chicken, beef or even turkey! No matter what you choose, cook as normal and then add to the pasta before serving. My favorite has been shredded chicken. It blends in so nicely and really fills you up.

How to store leftovers

Have extras? You can keep them in the refrigerator for up to 5 days. Be sure to keep them tightly sealed in a container to prevent air from ruining the flavor.

  • handful of fresh chopped basil
