Chocolate Peppermint Cookies

Ingredients
  

Cookie Ingredients

  • 1 cup Almond flour
  • 1/3 cup Coconut flour
  • 1/3 cup Cocoa powder
  • 1/4 cup Almond butter
  • 1/2 cup Applesauce
  • 1/4 cup Coconut sugar
  • 1/4 cup Honey
  • 1 tsp Vanilla
  • 1/4 tsp Sea salt
  • 1/2 tsp Baking soda

Toppings

  • 1/3 cup Chocolate chips
  • 1/3 cup Crushed peppermint

Instructions
 

  • To begin, preheat your oven to 350F and place a sheet of parchment paper on top of your baking sheet.
  • In a large bowl, mix your wet ingredients: almond butter, applesauce, honey, and vanilla. Mix well and be sure to break apart any clumps.
  • Once smooth, add in the dry ingredients: coconut sugar, almond flour, coconut flour, cocoa powder, sea salt, and baking soda. Mix super well to create your cookie batter. You can definitely mix these in a separate bowl first, but I have found that this method works just as good!
  • Once your batter looks even, use your cookie scoop and measure out even amounts of cookie dough onto your baking sheet. I was able to make 9 large cookies, but you can make 12 smaller ones as well. Leave a little room between each cookie and flatten gently to create the perfect cookie shape.
  • Bake for about 20 minutes and then let cool!
  • While your cookies are cooling, melt the chocolate in your microwave safe bowl and prepare your crushed peppermint. Dip the tops of each cookie into the chocolate and then sprinkle each cookie with peppermint. I then drizzled my leftover chocolate on top, but that's optional :)
  • Enjoy along with a hot cup of coffee!
