Vegan Feta Butternut Squash Pasta

I'm sure by now that you have seen the feta pasta trend. I had to try it and add my own little twist. Cozy up with a delicious bowl of Creamy Vegan Feta Butternut Squash Pasta. Made with vegan feta, butternut squash, and fresh basil, it provides all of the warm and delightful flavors of the season. Pair this amazing and easy sauce with your favorite gluten free pasta for the simplest savory dish.

Ingredients
  

  • 20 oz chopped butternut squash
  • 1 block vegan feta
  • 3 tbsp olive oil
  • 3 tbsp minced garlic (about 3 cloves)
  • 1/4 tsp thyme
  • 1/4 tsp rosemary
  • 1/4 tsp parsley
  • 1/4 tsp black pepper
  • pinch of sea salt
  • 2 cups gluten free pasta
  • handful of fresh chopped basil

Instructions
 

  • Though it sounds (and tastes!) gourmet, creamy feta pasta is just as easy to prepare as any other pasta recipe. You’ll start by boiling the noodles, and then you’ll prepare the creamy sauce by simply throwing everything into a dish!
  • To begin, prepare the pasta according to the package. Drain and set aside. I recommend adding a little olive oil to the cooked pasta to keep it from sticking together.
  • Next, prepare your sauce dish. In an oven safe dish, place your feta block in the center and pour the butternut squash chunks around it. Drizzle the olive oil right on top.
  • Add in your garlic, salt and pepper, and other seasoning by sprinkling it all on top.
  • Bake the sauce dish in the oven at 350F for about 50 minutes. You can also bake this at 400F for about 30 minutes.
  • Once the butternut squash is nice and soft, remove from the oven and add in your fresh, cut up basil. Using a fork, mash everything together to create a nice, creamy sauce. Add in your pasta to the baking dish and mix to coat the noodles.
  • Serve up with a little more fresh basil and enjoy :)
