Ingredients

  • 1 cup almond flour
  • 1 tbsp coconut sugar
  • 1 egg

Instructions

  • To begin, preheat your oven to 350F and place a sheet of parchment paper on top of your baking sheet.
  • In a large bowl, combine all ingredients and mix well to create the dough. You can start with a mixing tool first, but then use your hands to form a thick, smooth dough. The dough may be just slightly sticky, but still pliable.
  • Sprinkle a dash of almond flour on parchment paper to prevent sticking and place the dough on top. Sprinkle a dash of almond flour on top of the dough and then place another sheet of parchment paper on the top. This will make the rolling process much easier.
  • Start rolling! Attempt to roll the dough in between the layers of parchment to about 1/4 inch thickness or as thin as you can make it. Grab your cookie cutters and start pressing! Cut out as many as you can and place them on your lined baking dish.
  • When you have no more space to cut out cookies, roll the leftover dough back together in a ball and repeat the last couple of steps until you have no dough left!
  • Bake for about 15 minutes or until the tops are golden brown. Let the cookies cool completely before frosting! Enjoy.
