I love this recipe because I think it’s perfect for all ages! Kids love sprinkles and honestly adults should too; they’re colorful and fun and always tasty. As an added bonus, these “sandwiches” are gluten and dairy free so they’re perfect for all the people in your life with allergies or intolerance’s like myself. Hope you guys enjoy the recipe as much as I do!
Ingredients:
For the cookies:

1 cup smooth almond butter (or other nut butter)

4 eggs

1/2 cup coconut flour

1/2 tsp baking soda

1/2 cup applesauce
For the frosting:
For the sprinkles
Recipe:

Combine all the ingredients for the cookies and mix well

The mixture is a little softer, so use a spoon to create a circle shape on a non stick baking tray

Bake at 350 for a little under 10 minutes. They bake quick and they’re soft cookies so just keep an eye out for them

While they’re baking, prep the frosting (see Vegan Cashew Vanilla Frosting)

(Optional) Add about 1/2 of the packet of dye to the frosting to make it pink and mix

After the cookies are baked and cooled, add 1 to 2 tablespoons of frosting for each sandwich and roll the edges of the sandwich into the sprinkles so they stick to the frosting

Store in the fridge!
