Which one are you: raw cookie dough or cooked cookies? Honestly I am a good mix of both, but whenever I bake, I eat a good chunk of the batter before I even get to bake it. While I never have any regrets about it, I wanted to create a cookie dough that was safe to eat, aka, lacked the raw egg. So I created an edible cookie dough that is totally free of gluten, dairy, refined sugars, and is 100% vegan. It’s sweetened with applesauce and a little maple to get a really nice flavor. I also used Loving Earth dark chocolate to create yummy chunks, but you can use whatever chocolate you have on hand. Happy baking and happy eating
Ingredients:
-
1 and 1/2 cups almond flour
-
2 tbs coconut flour
-
2 tsp cinnamon
-
1/2 tsp sea salt
-
4 tbs applesauce
-
3 tbs maple syrup
-
1/2 tbs vanilla
-
1 bar Loving Earth dark chocolate
Recipe:
-
Mix together the almond flour, the coconut flour, cinnamon, and sea salt in one bowl. Make sure you break apart any large chunks of flour
-
Add the liquid ingredients into the bowl: applesauce, maple syrup, and vanilla and mix super well. I actually gave up using the fork and just used my hand to get the cookie dough consistency faster
-
Break apart the chocolate bar (I used my roller to break it into pieces) and mix it into the dough. Make sure the chocolate gets mixed in evenly so every bite is full of chocolate chunks
-
Store in the fridge and enjoy whenever!
