f you’ve been following this blog for a while now, or even just a couple of days, you know how much I love breakfast! I could eat breakfast food all day, every day and be totally ok with it. I love coming up with new ways to enjoy breakfast, for example, a loaded pancake stack. Pancakes are basically dessert for breakfast and there’s nothing better than that. This recipe is super simple and you can even make some extra for the week if you’re in the mood to meal prep. Hope you guys like this recipe as much as I do! 🙂
Ingredients
- 1½ cups almond flour
- 2 Tbsp tapioca flour
- 1 tsp baking powder
- Pinch sea salt
- 1 -2 tbsp coconut sugar
- 2 eggs
- 3/4 cup coconut milk
- 1 tsp vanilla extract
- 1 tbsp cacao powder
Instructions
- Combine all ingredients in a large mixing bowl and stir until batter forms
- Coat a non-stick frying pan with coconut oil and heat on medium heat
- Pour desired amount of batter onto pan for each pancake and flip when small bubbles start to form. The batter makes about 10!
- Plate and top drizzle with all the goods!
