As per usual, I’m always trying to combine a few of my favorite foods into one recipe. In this case it was cookie dough in a loaf form with a yogurt frosting. It’s the simplest two ingredient dairy free frosting on top of a moist gluten free, dairy free, and refined sugar free cookie dough loaf. It does take a little while in the oven, so just be patient, it’s totally worth the wait! Hope you guys love it as much as I do happy baking!
Ingredients:
For the loaf:

1/2 cup coconut flour

1/2 cup dairy free yogurt

2 eggs

1/2 cup almond butter
-
1 tbsp vanilla

1/2 tsp baking powder
-
pinch sea salt

1/4 cup coconut sugar
-
1 small chocolate bar (or 1/2 cup chocolate chips)
For the Frosting:

1/2 cup dairy free yogurt
-
1/2 cup smooth almond butter
Recipe:

Make the frosting: mix together the two ingredients and let rest in the fridge for a couple of hours! Do this first so it has enough time to thicken up

Combine all wet ingredients for the loaf and mix well. Be sure to break apart any clumps formed by the eggs

Add in the dry ingredients (except the chocolate chunks) and stir. Mix to create a smooth batter

Break apart the chocolate bar into chunks or use regular chocolate chips and add them to the batter. Mix evenly

Pour the batter into a small lined loaf pan and smooth out the top

Bake for about 50 minutes at 350 or until the top and edges are golden brown

Once the loaf has cooked and cooled, top with a thick layer of frosting, maybe a pinch of sea salt if you’re in the mood, and enjoy!
