This is the best easy recipe for healthier lemon muffins made with rice olive oil. The light and fluffy lemon muffins are made with gluten free almond flour, maple syrup, and of course, olive oil which helps makes these bakery style muffins moist on the inside and perfectly crunchy on the outside!
Lemon flavored anything will always have a special place in my heart.
Fun fact about me: when I was younger, I was Girl Scout! Of course, what everyone always remembers about girl scouts are the cookies. I loved that time of year honestly because it meant I would get to eat these cookies. One year, Girl Scouts came out with a lemon cookie that changed my life.
Okay, that’s a bit of an exaggeration, but these cookies made me fall in love with all things lemon. These cookies were perfectly bite sized, melted in your mouth, and were coated in a lemony sugar powder. I don’t remember what these cookies were called, but I am forever thankful for them for introducing me to these perfectly summery treat.
More recently, I went to a farmers market in NYC and stumbled across a gluten free bakery booth that sold this sweet lemon coffee cake loaf that was absolutely PERFECT. This cake made me fall in love with lemon all over again and since then, I have been trying to recreate a loaf that was just as lemony and just as perfect.
While I’m not quite there yet, I did make these lemon olive oil muffins that turned out great!! They’re not the coffee cake loaf I was hoping for, but they’ll do for now. These muffins are gluten and dairy free and can be made vegan if you want them to be. I hope y’all love this recipe as much as I do! Happy baking 🙂
What are the main ingredients in healthy lemon olive oil muffins?
Almond flour – provides a soft, fluffy texture for muffins. It is absorbent and light in color. Almond flour is also gluten free which helps ensure that these muffins were 100% gluten free.
Olive Oil – adds the perfect moisture content! Olive oil also really adds to the flavor of these muffins.
Maple syrup – one of my favorite natural sweeteners, maple syrup could easily be swapped with honey or agave.
Egg – Help provide some structure to these muffins. Haven’t tried with flax egg but if you do, be sure to let me know!
and lots of fresh lemon for that delicious lemon flavor!
How to make healthier lemon olive oil muffins:
They are actually quite easy to make and you can prepare any glaze you crave while you are waiting for the muffins to cool, and then in less than an hour you will have beautiful muffins all ready for eating!
Start by combining your wet ingredients first. In one big bowl, add in your lemon juice, maple syrup, egg, olive oil, and vanilla. Mix super well!
In the same bowl, add in your dry ingredients: almond flour, sea salt, and baking soda. Mix super well to create a nice smooth mixture.
Line your muffin tray with muffin liners and pour even amounts of batter into each liner. You should have enough batter to fill 12 muffins, leaving a little space at the top for rising.
Bake at 350 F for about 30 minutes! Let the muffins cool completely before eating. Enjoy 🙂
