What’s your favorite type of food? Southern, Mexican, Chinese? The options are honestly endless. I was born in Israel and grew up eating Mediterranean style food. Big salads with tomatoes and cucumber dressed in lemon juice were my go to and pita pockets with chicken were the best way to spend an afternoon. A dish that was made frequently in my house was Shakshuka. In case you’ve never heard that word before Shakshuka is a delicious combination of eggs, tomatoes, and spices popular across the Middle East and North Africa. To be honest, I never had a desire to eat this dish growing up. I didn’t love tomato sauce so it never looked appealing. These days, I’m trying to break out of my small picky food shell and try things I never did, like avocado for example! Did you know I never ate avocado until a few months ago? What kind of foodie would I be if I didn’t eat avo?? So I tried it and, what do you know, I loved it. So I figured there was no harm in trying this delicacy. Surprise surprise, I loved it. It took less than 10 minutes to make which is a total positive. I used ingredients I already had on hand so there was no extra money wasted, love that too. I hope the recipe makes sense, ENJOY!
