Apparently I am the queen of recipe fails because here we go again. I keep trying to make nut butter, but I don’t think my food processor can handle that. So if you have any recommendations for a kick ass food processor please leave them in the comments below. But anyway! Because I tried to make the nut butter, I had leftover processed nuts. So instead of just tossing them, I made these cookies. They’re super walnut-y so I hope you like walnuts. Let me know what you think if you get a chance to make them!
Ingredients:

1 and 1/2 cup roasted walnuts (toast for 10 minutes)

1 tbs cacao powder

1 tbs maple syrup

3 tbs brewed coffee

2 tbs applesauce

1 cup almond flour

Optional: 4 tbs chocolate chips
Recipe

Roast the walnuts! Lay them flat on a baking sheet and bake for about 10 minutes. This helps bring out the toasted flavor

Once they’re roasted, throw them in the food processor with everything except the almond flour. Blend until mostly smooth, some bigger pieces of the walnuts are ok. The mixture will be quite oily due to the walnuts, but once you add the flour it’ll be ok!

Take out of the blender and add in the almond flour. Mix super well until there are no flour clumps left (option to add the chocolate chips here)

Roll the dough into evenly sized balls and press them flat with your hand or with your fork. Try to press them together well so they don’t fall apart when baking

Bake the cookies for about 20 minutes at 350 degrees. They should become golden brown and the smell of walnuts should fill the house! Let them cool and enjoy!

You can top each one with a little sea salt for the best flavor combo
