Whenever I see anything s’more related, it reminds me of my childhood. I grew up a Girl Scout and I can always think back to campfires and s’mores. I remember sitting around with my friends and eating upwards of 4 or 5 s’mores and then, on a sugar rush, staying up half the night telling ghost stories. While my Girl Scout days are long over, my s’mores days definitely are not. There is seriously nothing better than melted marshmallow, on melted chocolate, on a sweet graham cracker. I’ve obviously had to modify a little and make my own versions these days with dairy free chocolate and gluten free graham crackers, but I think I’ve made it work pretty well!
Feeling inspired by all these memories lately, I’ve been making all the s’mores themed desserts. This was the first of many I made a flourless blondie topped with all the s’mores bests. It’s a recipe that was gone before I could even put it in the fridge. It may be one of the best things I’ve ever made. As an added bonus, its gluten free and dairy free and you would never know it! What goes in a healthy flourless s’mores blondie?
For the batter:

1 cup cashew butter

1/3 cup honey

1 and 1/2 tsp vanilla

1 egg

1/4 tsp sea salt

1/4 cup applesauce

1/2 tsp baking soda
For the top:

1/3 cup mini marshmallows

1 crumbled up chocolate bar
Overall, they have very minimal ingredients so when you make them and you get an incredible blondie, you wonder how they are so good!
Tools needed to make these healthy and simple blondies:
This recipe requires minimal ingredients and, in return, very few kitchen utensils. All you need to make this recipe is an 8×8 baking dish, parchment paper, a bowl, and a mixing utensil. I love to use a fork to mix the batter, but a whisk would probably work better if you have one!
How to make s’mores blondies:
Preheat your oven to 350F and line an 8×8 brownie dish with parchment paper.
Mix the wet ingredients of the batter together first in one bowl and stir well to create an even batter. The wet ingredients are: cashew butter, honey, vanilla, egg, and applesauce.
Add in the dry ingredients (baking soda and sea salt) and mix well!
Pour the mixture into an 8×8 lined brownie tray (don’t add the toppings yet) and bake at 350 for 25 minutes (they should not be fully baked just yet.)
At the 25 minute mark, take out the blondies and top with the mini marshmallows and crumbled up chocolate bar.
Place the baking dish back in the oven and bake for another 7-9 minutes to allow the chocolate to melt and the marshmallows to roast a little.
Right before you take them out, broil for about 1 minute or until the mini marshmallows are brown on top!
Let cool, top with a pinch of sea salt, and enjoy!
Substitution options for flourless s’mores blondies
When it comes time to make your delicious blondies and you find that you don’t have cashew butter on hand, don’t panic! It can be substituted with an ingredient that you most likely already have in your pantry. Here are some simple swaps for cashew butter, as well as other ingredients!

Cashew butter: Though cashew butter helps achieve a great flavor in these blondies, using a different nut butter is perfectly fine! Peanut, almond, or walnut butter are great to use at a 1:1 ratio.

Egg (vegan): For egg-free, vegan s’mores blondies, feel free to use apple sauce (1/4 cup) or ground flax seeds. If using seeds, mix 1 tablespoon of seeds with 3 tablespoons of water. Whisk until the water is absorbed and a gelatinous consistency is achieved. Then, stir into your batter as directed.

Honey: In place of honey you can use molasses or maple syrup. Using either will slightly altar the taste and texture, though it shouldn’t be detrimental to your recipe. Look up the conversion specific to your brand.
