Whats your favorite type of food, sweet or savory? I’m such a sucker for sweets, it’s unreal. I could survive off of just sweet meals all day long. I could have pancakes for breakfast with almond butter, sweet oatmeal for lunch with all the fruits and toppings, and anything baked for dinner. However, because this plan isn’t exactly sustainable and I would definitely crave savory after a little while, I’ll just stick to dessert at least once a day lol. I can’t go one day without a little something sweet after my dinner. It’s like I just go to bed happier after I’ve given myself a little treat. So, last week I made strawberry almond freezer fudge as my go to dessert. I always make/bake something sweet on the Sunday before the week so I have something easy to grab. These were especially easy because all you have to do is throw everything in a food processor, top with chocolate, and freeze. What could be simpler than that?? No need for baking time or anything. I hope you guys enjoy this recipe just as much as I did, it may be one of my favorites… for now!

Ingredients:

  • 16 oz raw almonds

  • 3 pitted dates

  • About 1 oz freeze dried strawberries

  • 1/3 cup unsweetened applesauce

  • 2 tbsp coconut oil

For the top:

Recipe:

  1. Throw all ingredients in a food processor until everything is very well mixed

  2. Press the mix into a small square cake tray (I lined it with parchment paper first to ensure it wouldn’t stick)

  3. Melt chocolate and pour on top. Drizzle on tahini and use a toothpick to create the marble effect

  4. Freeze overnight and cut into squares when you’re ready to eat! Store in the freezer, they should stay slightly soft just like fudge!
