Cinnamon Maple Loaded French Toast

I don’t normally write a recipe blog post for a breakfast as “simple” as french toast, but this plate is just so loaded that I couldn’t help myself. I wanted to look at my blog months from now, see this post, and be able to recreate the amazing breakfast plate I had on this cold rainy Tuesday. Sometimes I get so wrapped up in creating new recipes for you guys, that I forget to look back at some of my old ones. Those goodies I was excited to make, tasted amazing, but then I moved on. Not for this one! Here are all the steps I went through to create the most amazing and loaded plate of cinnamon maple loaded french toast:

Ingredients

For the Toast:

  • 1 egg
  • 4 tbs almond milk
  • 1 tsp cinnamon
  • 1 tbs maple syrup
  • 2 slices gluten free bread

For the Toppings:

  • 1 honey crisp apple
  • cinnamon
  • 1-2 tsp coconut oil
  • chicken sausage
  • dairy free cashew yogurt (or other yogurt works too!)
  • bee pollen
  • granola
  • almond butter

Instructions

  1. Combine the egg, almond milk, cinnamon, and maple syrup in a wide bowl and mix well
  2. Let the bread slices soak on both sides for about two minutes each
  3. Spray a pan with avocado oil or coconut oil and cook on each side until golden brown and crispy. Mine took about 3 minutes on each side, but I love it on the crispier side
  4. While they’re cooking, slice up the chicken sausage and bake it in the oven until it’s ready
  5. Make the cinnamon apples: cut the apples into small chunks, cover in cinnamon and a little coconut oil, and roast on the stove top until their soft
  6. Slice the toast into halves, top with yogurt, granola, cinnamon apples, bee pollen, and almond butter. You can add the sausage right on top! Trust me, it’s a perfect combo
  7. ENJOY
