What is your favorite meal of the day?

Fun fact: I once hated breakfast. My favorite meal of the day now is 100% breakfast, but I actually feared it one point. How silly does that sound; how can anyone possibly fear a meal? Well, I did. I worried that eating a meal early in the day would cause me to eat unnecessary calories and in turn, cause me to gain weight. I would skip the meal and then be so confused why I scarfed down lunch like it was my job. I ignored my hunger cues because I became so obsessed with a number on the scale. These days, I obsesses in the best ways about the things that make me happy. I try to do the things that bring me joy, and that means, eating breakfast. I love everything about the wide varieties of breakfast food out there and that is why I am so excited to bring you these orange breakfast muffins. They are so naturally sweet and are gluten and dairy free. Hope you guys like them 🙂


Ingredients

  • 1/2 cup almond flour
  • 1 cup oat flour
  • 2 eggs
  • 3 tbsp coconut sugar
  • 2 tsp baking powder
  • 1 cup dairy free yogurt
  • 1/4 tsp sea salt
  • 4 tbsp apple sauce
  • Zest from two oranges
  • Juice from 1 orange
  • Optional: chocolate chips to top

Instructions

  1. Zest and juice the oranges
  2. Combine them into one bowl and mix in the other wet ingredients
  3. Add in the dry and stir will
  4. Line a muffin tin with muffin liners and pour the batter about 3/4 of the way up
  5. Optional: top them with a handful of chocolate chips
  6. Bake for about 45 minutes at 350 degrees or until the tops are golden brown and cooked all the way through (you can check by sticking a toothpick down into the center. If it comes out clean, they’re ready)
  7. Let cool and enjoy! They go perfect with a little almond butter on top or just on the go for a great breakfast
