No need for a story today, let’s just get to the recipe! Hope you guys love it
Ingredients:
Muffin Batter:
-
1 cup almond flour
-
1/2 cup brown rice flour
-
1/2 cup dairy free yogurt
-
2 eggs
-
1/4 cup maple syrup
-
2 tsp vanilla
-
1 tsp baking soda
-
1/3 cup melted chocolate chips
-
3 tbsp applesauce
-
pinch sea salt
-
2 tbsp cacao powder
Filling:
-
8 tbsp almond butter (1 per muffin)
Recipe:
-
Make the muffin butter by combining all wet ingredients first. Mix well to break apart any clumps
-
Add in the dry ingredients and stir as you add to keep the flour from sticking together
-
Using a lined or non stick muffin tin, pour about two to three tbsp batter into 8 containers
-
Add 1 tbsp almond butter onto the center of each one. Try to keep the almond butter just in the center
-
Add another tbsp of batter on top of the almond butter. You may need a little extra on each one to cover up the almond butter filling
-
Bake the muffins for about 40 minutes at 350 degrees
-
Let them cool and frost with my 2 Ingredient almond butter yogurt frosting
-
