Tools needed to make this recipe
This recipe is not only simple with the ingredients, but it’s also easy with the tools. No need for a fancy stand mixing tool, no need for fancy bowls or cutlery, just a couple of regular mixing bowls, one mixing tool (I used a spatula), and a baking dish. I used a basic sized pie pan, but you can use an 8×8 brownie dish or a different sized pan all together, just keep an eye out for the baking time as it may be different.
How to make healthy raspberry cobbler
Start by preheating the oven to 350 F
Then, in a large bowl, mix together the ingredients for the raspberry filling: start with the honey, lemon juice, and vanilla and mix super well to combine. Add in the raspberries and the coconut flour and mix. Some of the berries may break apart, but that’s ok!
Spoon the berries into an 8×8 inch pan or pie dish, leaving the juice in the bowl behind.
(optional) sprinkle a handful of chocolate chips on top of the raspberry filling for extra flavor
In another bowl, mix together the dry ingredients for the crust.
Then, add in the wet ingredients and stir until well combined.
Spread cobbler topping on top of the raspberries until most of the berries are covered.
Bake in oven for about 50-60 minutes or until the topping is golden brown.
Let cool for 15 minutes before eating and enjoy 🙂
Store leftovers in the refrigerator.

In my opinion, adding toppings to a cobbler is all the fun. You can get super creative with your toppings, or go back to the basics with ice cream 😉 There’s really no wrong answers here:
Whipped Cream
Whipped cream is basic and original. It’s the perfect sweetness right on top and the texture goes perfectly with the crust
Ice Cream
This hot and cold combo really enhances the flavors. The obvious choice is vanilla, but you can totally get creative here. I highly suggest Van Lewueen if you want a vegan ice cream that has a really good texutre
Fruit
There’s already fruit in this dessert, but why not add more?? Imagine the warm melty raspberries, but with a cold berry right on top for balance. It’s a no brainer
Healthy raspberry cobbler substitutions
Although the ingredients listed above should be easy to find and affordable, sometimes you don’t have them on hand. Let me help you create this recipe with a few modifications:

Honey: I had honey on hand for this, but you can use maple syrup too!
