The most delicious and healthy cookie cups ever
Growing up, I always got so excited for any occasion involving sweets because it meant one thing… an excuse to eat all the sweets I could ever want. For example: Halloween. I’d go out with my friends and collect as much candy as I could and then we’d sit together, watch scary (not that scary) movies, and trade candy until we all had what we wanted in our baskets.
Even though the years have passed, I’d say I still get just as excited whenever Halloween rolls around or the shelves become stocked with Valentine’s Day chocolates or the Easter bunny shaped marshmallows make an appearance in my life. There’s just not much too not like about sweets. The only thing that gets me down these days, is how my stomach reacts when I eat all these things… which is not so good!
When I saw how my usual favorite sweet treats affected my body, I knew there had to be other versions of them that I could enjoy without feeling the wrath of dairy on my digestion. After finding some better options for me, I started baking with them because that was obviously the next logical thing to do.
As with all of my baking recipes, these cookie cups are made using healthier ingredients. I love to make treats that are packed with nutrients, but still taste delicious, and these M&M cookie cups are just that. You’re going to love this healthier treat and your family will too!
Ingredients used to make these M&M Cookie Cups
M&M Cookie cups are made using 8 ingredients and are made complete topped with Unreal Chocolate Gems, that are basically the healthier, dairy free, M&M! Here’s what you’ll need to make this recipe:

1 cup almond flour

2 tbsp coconut flour

1/3 cup honey

1/2 cup smooth almond butter

1 egg (can sub 1/4 cup applesauce to make VEGAN)

1 tsp vanilla

1/2 tsp baking soda

1/2 tsp baking powder

FOR THE TOP: 1/3 cup chocolate gems!
Kitchen Tools needed to make this recipe
M&M cookie cups are made in the most simple and efficient way! Simple and easy if you ask me. You’ll need one big mixing bowl, one mixing tool (i used a fork) and one muffin tin! This recipe makes about 8-10 cookie cups, so make sure your muffin tray is big enough to hold all of them 🙂
How to make healthy m&m cookie cups
M&M cookie cups are extremely easy to make and only require 5-10 minutes of actual prep time. You’re going to love how easy this recipe is.
Start by combining all the wet ingredients into your mixing bowl. Add your honey, egg, vanilla, and almond butter and mix super well to evenly combine the ingredients.
Add in your dry ingredients all at once and mix the batter super well. The dry ingredients to add here are your almond flour, coconut flour, and baking soda/powder.
You have an option to add your m&m or m&m alternative straight into the batter and mix it in! I only used them to top the cookies. You can also do both… either way works really well!
Line your muffin tray with muffin liners or spray it with avocado or coconut oil to prevent sticking.
Measure out even amounts of batter using an ice cream scoop and place the batter into 8-10 muffins.
Slightly damp your fingers with water to prevent the batter from sticking and press the batter into the base of the cups to flatten out the top and make it smooth. The batter is a bit stickier, so wetting your hands prevents the mess.
Hand place the m&m’s on top of each cookie and gently press them into the tops
Bake at 350 degrees for about 20 minutes, cool, and enjoy! I filled up my cups with whipped cream, but that’s optional!

For the perfect result, spoon flour into a measuring cup and then level it off. Avoid scooping it from the package, as this creates a denser amount of flour.
Why line or spray your muffin tray?
Cookie cups are nice and crisp on the outside, but still stay soft and fluffy on the inside. If you don’t line or spray your muffin tray, the cookies may stick and break when you and try and take them out. I sprayed my muffin tray and was able to slide these right out and fill the inside with whipped cream! Save your cups by taking this extra step, trust me.
Substitution options for m&m cookie cups
When it comes time to make your delicious cookie cups and you find that you don’t have almond butter on hand, don’t panic! It can be substituted with an ingredient that you most likely already have in your pantry. Here are some simple swaps for almond butter, as well as other ingredients!

Almond butter: Though almond butter helps achieve a great flavor in the cookie cups, using a different nut butter is perfectly fine! Peanut, cashew, or walnut butter are great to use at a 1:1 ratio.

Egg (vegan): For egg-free, vegan cookie cups, feel free to use apple sauce (1/4 cup) or ground flax seeds. If using seeds, mix 1 tablespoon of seeds with 3 tablespoons of water. Whisk until the water is absorbed and a thicker consistency is achieved. Then, stir into your batter as directed.

Honey: In place of honey, you can use maple syrup or whatever liquid sweetener you prefer. Using either will slightly altar the taste and texture, though it shouldn’t be detrimental to your recipe. Look up the conversion specific to your brand.
