Your new favorite holiday cookies
Cookies are my all time favorite holiday treat to make for myself, my roomates, and my family. Cookies are the perfect treat to satisfy any sweet craving at any time or any point of the day. Need a breakfast dessert? Let me help you! Need a lunch dessert? I’ve got so many amazing cookie recipes… and this one has got to be a top favorite (just don’t tell my other cookies.)
As soon as November hit, I knew I had to start holiday baking right away. I wanted to share as many holiday recipes during the season as I possibly could because we all need something sweet in our lives right now. So, I pulled out all things holiday, including my jar of crushed peppermint, and got to work! This year, we have put together 8 Days of Treats and Eats! Each day, starting December 11th, 2020, we will share one brand new holiday recipe. Ending with this one. Best for last, right?
After weeks and weeks of testing, we shared so many exciting recipes. These cookies are the simplest to make and the prettiest too. Chocolate Chip Peppermint Cookies are the perfect combo of the classic chocolate chip cookie and holiday flavors. You can even get creative with the toppings on these cookies. Try cookie icing, frosting, sprinkles, melted chocolate, and even more crushed peppermint.

How to make chocolate chip peppermint cookies
In a medium sized mixing bowl, combine your wet ingredients: egg, oil, almond butter, maple syrup, and vanilla. Mix these ingredients together well to break apart any clumps formed by the almond butter.
Once smooth, add in the almond flour and baking powder and mix! This should start to form your cookie batter.
Then, pour in the crushed peppermint and chocolate chips. Mix well to evenly distribute the add-ins. Feel free to add a little more of each if you want even more holiday flavor.
Chill the batter! This step is important, don’t skip it.
Preheat your oven to 350F and line your baking tray with parchment paper.
Use an ice cream scoop to measure out even amounts of cookie dough and lay them on the baking tray, leave a little room in between each cookie. I was able to create 8 large cookies, but feel free to make them a little smaller for more cookies.
Bake for about 20 minutes or until slightly golden brown. Let them cool and top with some drizzled chocolate and more crushed peppermint.
The most delicious gluten free cookies
I have been gluten free for a few years now and have found so many ways to enjoy this way of life. When I first had to cut out gluten to help my digestion, I was so worried that I wouldn’t be able to enjoy the same holiday sweets I once could. After falling in love with baking, I knew I had to share gluten free and dairy free recipes to help other gluten free people like myself!
If you know someone that has to stay away from gluten for any reason, share these cookies with them! These holiday themed chocolate chip cookies are not only gluten free, but are suitable for people with other allergies as well. These cookies won’t let you down.
How long do chocolate chip peppermint cookies last?
These cookies will store quite well. After you bake them, keep them in an airtight container at room temperature. I like to use a glass container with a lid.
They will last about a week this way. Alternatively, you can keep them in the fridge to keep them fresher for longer. I was able to keep mine fresh for about two weeks this way 🙂
