What are your favorite Super Bowl Sunday snacks? As much as I love sweets, my favorite game day foods are all things savory and spicy. I don’t really pay attention to the game much if I’m being honest. I love the commercials and maybe the half time show, but really I’m all about the food. I love seeing what other people bring and I love gathering around the table filling our happy bellies. So I couldn’t not share a Super Bowl recipe this year!
One of my all time favorite foods is buffalo chicken dip. Throughout college, I ate buffalo chicken dip literally once a week. Except for our version was full of dairy and not so amazing ingredients. I never felt great after eating it, but I loved the experience of sitting around with my roommates and devouring a whole dish going through BAGS of chips. While there is absolutely nothing wrong with this, I’m glad I could create a version of buffalo chicken dip that I could eat and not have crazy stomach pains from the morning after. I have tested a few recipes and I am so excited to share this one with you guys. You can definitely add more hot sauce if you love all the spice or less if you don’t want that kick, but it’s totally up to you! You also don’t have to serve them in small peppers, but why wouldn’t you?? Look how cute! Hope you guys love this and have an amazing game day.
Ingredients
- 2 medium chicken breasts
- 8 oz dairy free Kite Hill cream cheese
- 1/3 cup dairy free Forager Project unsweetened yogurt
- 5 tbs hot sauce
- 1/4 tsp paprika
- 1/2 tsp garlic powder
- pinch of pink salt
- 1 finely chopped cucumber (optional)
- 8-10 small bell peppers
Instructions
- Poach the chicken breasts. Place the chicken pieces into a pot and cover them with water. Cook at a medium heat until they’re cooked through the center. I never time this, so just cut one piece in half to check if it’s no longer pink in the middle
- Use two forks to shred the chicken by pulling it apart. Tip: use a food processor to make the shredding process quicker and easier
- Mix all the other ingredients in a bowl and then add the chicken last. Mix the chicken into the sauce well so that every piece is well covered
- Taste it! If you want it spicier, add another tablespoon or two
- Wash and cut the peppers in half. Clean out the seeds and any white parts (whatever those are called) and fill each pepper with a spoonful of the dip!
- Serve and enjoy the game 🙂
