Sweet potato is definitely one of the most versatile ingredients I’ve ever used. You can cut them into larger slices for toast, you can chop them into fries, you can eat them sweet or savory, and you can mash them and use them in recipes. I’m sure there are so many more ways to use sweet potato, but my favorite so far is mashed in a recipe. Sweet potato adds a lot of moisture to recipes as well as a natural light sweetness which makes it even easier to use less added sugar.
I love this recipe because it’s so easy to make with the simplest ingredients. These are gluten free, dairy free, and refined sugar free. They are still just as fudgy and sweet as if you made them “normally.”

Ingredients

1/2 cup almond butter

1/2 cup mashed sweet potato

1 egg

1/3 cup maple syrup

1 tsp vanilla

1/4 cup cacao powder

1/2 tsp baking soda

pinch sea salt
Instructions

Make the mashed sweet potato first! Take one small sweet potato, peel it, cut into bigger chunks, and place in a pot with water. Boil until the pieces are soft enough to pierce with a fork. Remove water and mash into a bowl

Place the 1/2 cup mashed sweet potato into a bowl with the other wet ingredients and mix very well. Be sure to break apart any clumps in the sweet potato

Add in the dry ingredients and mix

Pour batter into a lined baking dish and bake at 350 for about 30 minutes

Cool, cut, and enjoy!
