When Spring rolls around, all I want is anything orange flavored. So here’s another orange recipe to get you in the Spring mood! Hope you enjoy it
Ingredients:

1 cup mashed Japanese sweet potato (can be regular sweet potato)

3 eggs

2 cups almond flour

1/4 cup honey

1 and 1/4 cup tapioca flour

1/4 cup applesauce

2 tsp poppy seeds

1/4 cup coconut sugar

4 tsp orange zest
-
1/4 cup orange juice
-
1 tsp baking soda

Optional frosting: 1/4 cup diary free yogurt, 1 tbsp maple syrup, 3 tbs orange juice
Recipe:

Prepare sweet potato. Peel one medium sweet potato, cut into large chunks, and boil until they’re soft enough to pierce with a fork. Mash the pieces, measure out one cup, and place in a bowl

Add the other wet ingredients into the bowl with the sweet potato. Mix it well and break apart any clumps formed in the sweet potato

Add in the dry and stir until a batter is formed

Pour the batter into a lined loaf pan and bake at 350 for an hour and 20 minutes. The top should be golden brown, but it does take some time for the inside to be fully baked and fluffy

Before it totally cools, frost the loaf (optional)
