For whatever reason, this dessert reminds me of that time. It reminds me of warm days, pool adventures, camp fires, and a great time. A fresh, crumbly yet soft, strawberry cobbler topped with whipped cream or a vanilla ice cream is all the heart wants. Healthy, but also full of flavor and so much texture.
One of the best parts about this recipe is that it’s vegan, which makes it an option suitable for many! This is a great dessert to serve up when entertaining guests or attending a potluck. Your friends and family will be blown away by how tasty it is, yet secretly full of healthy, heart warming ingredients.
Another great part about this recipe is that you can change up the fruit! Don’t have strawberries, try raspberries or blueberries. Ingredients used to create this strawberry cobbler
This recipe comes in two parts: the strawberry base and the crumbly crust top layer. All of these ingredients are super easy to find and shouldn’t break the bank to buy them. Tools needed to make this recipe
This recipe is not only simple with the ingredients, but it’s also easy with the tools. No need for a fancy stand mixing tool, no need for fancy bowls or cutlery, just a couple of regular mixing bowls, one mixing tool (I used a fork), and a baking dish. I used an 8×8 brownie dish for baking, but you can use a different sized pan all together, just keep an eye out for the baking time as it may be different.
How to make healthy strawberry cobbler
Start by preheating the oven to 350 F
Wash about 15 large strawberries and cut away the green tops. Chop the berries into small pieces. I cut each berry down into about 6-8 small chunks.
Then, in a large bowl, mix together the ingredients for the strawberry filling: start with the maple syrup, lemon juice, and vanilla and mix super well to combine. Add in the strawberries and the coconut flour and mix. Make sure all the ingredients are well combined.
Spoon the strawberries into an 8×8 inch pan or pie dish, leaving any juice in the bowl behind.
In another bowl, mix together the wet ingredients for the crust. These ingredients are the maple and almond butter!
Then, add in the dry ingredients and stir until well combined. (TIP: to chop the almonds, I poured them into a food processor first to break them apart)
Spread cobbler topping on top of the strawberries until all of the berries are covered.
Bake in oven for about 50-60 minutes or until the topping is golden brown.
Let cool for 15 minutes before eating and enjoy 🙂
Store leftovers in the refrigerator.
Cobbler topping ideas
In my opinion, adding toppings to a cobbler is all the fun. You can get super creative with your toppings, or go back to the basics with ice cream 😉 There’s really no wrong answers here:
Whipped Cream
Whipped cream is basic and original. It’s the perfect sweetness right on top and the texture goes perfectly with the crust. I find a dairy free version at Trader Joes that’s made with coconut milk rather than regular milk. It tastes amazing and the texture is spot on.
Ice Cream
This hot and cold combo really enhances the flavors. The obvious choice is vanilla, but you can totally get creative here. I highly suggest Van Lewueen if you want a vegan ice cream that has a really good texture and the most spot on flavor.
Fruit
There’s already fruit in this dessert, but why not add more?? Imagine the warm melty strawberries, but with a cold berry right on top for balance. It’s a no brainer
Healthy strawberry cobbler substitutions
Although the ingredients listed above should be easy to find and affordable, sometimes you don’t have them on hand. Let me help you create this recipe with a few modifications:

Maple Syrup: I had maple syrup on hand for this, but you can use honey too or another liquid sweetener that you love!

Almonds: I think almonds are easy to find, but you can totally use another nut!

Almond Butter: Replace it with any other nut butter! Cashew, peanut, or even tahini could work too!
