Decided to mix up the basic gingerbread man recipe and spice it up with chocolate. Honestly I do this with most recipes because anything with chocolate added is even better than the original. So let’s get to it!
Ingredients:

2 cups smooth almond flour

1/4 cup and 3 tsp arrowroot starch

2 tsp cinnamon

1 tsp nutmeg

1 tsp ginger
-
2 tsp cacao powder
-
1/2 tsp salt
-
1/2 tsp baking powder
-
3 tbs chocolate honey*
-
2 tbs applesauce
-
1 tbs vanilla
-
Optional: 1/2 chocolate bar to decorate
*If you don’t have chocolate honey, just add an extra 2 tsp cacao powder and add 3 tbs regular honey or maple syrup
Recipe:

Mix dry and wet ingredients separately and then slowly add them in together. The dough will start out crumbly, but the more you mix it, the smoother it becomes

On a non stick surface, roll the dough out until you have the right thickness for a gingerbread cookie

Use a cookie stencil to press out as many cookies as you can fit

Place on a non stick baking sheet and bake at 350 until golden brown. It took mine about 15 minutes to cook all the way through

Let them cool and melt 1/2 bar chocolate in order to decorate the cookies. Use a Ziploc bag and cut a little corner to use as a piping bag. Do this slowly since chocolate can be on the softer side unlike frosting. You can also use frosting to decorate! I have a Vegan Cashew Vanilla Frostingrecipe or a Avocado Chocolate Frosting
