If you’ve been following my blog or my Instagram for any period of time, you know how obsessed I am with sweets and all things baking. I really do love spending hours in the kitchen recipe developing and coming up with new creative ways to eat the same old stuff. I love taking bland cookies and making them exciting, I love taking simple brownies and making them holiday themed, and so on.
For the past year or so I have been truly in love with single serve desserts and recipes. I think the reason behind that is because they are so easy to make and require so few ingredients. As a baker, I go through bags and bags of flour and sugar and oil weekly. So when I make a single serve recipe and the recipe calls for 1 tablespoon of something, that is so much easier for me than using 2 cups of something. It’s also A LOT cheaper. I actually have an entire e-book dedicated to single serve both sweet and savory recipes so you can definitely check that out if you haven’t.
In the meantime I’m sharing this NEW recipe for free! This is such a fun recipe and I’m so excited to share it. I made an entire video dedicated to it so you can find that on my Instagram or on my YouTube. I hope you guys love this recipe as much as I do. Happy Baking!
Ingredients:
- 1/3 cup almond flour
- 1 tbsp maple syrup
- 1 egg
- 1 tbsp pumpkin
- 1/2 tbsp cacao powder
- 1 tsp coconut oil
- 1 tsp cinnamon
- 1 tbsp coconut sugar
- 1 tbsp chocolate chips
Instructions:
- Throw all ingredients together in a bowl and mix super well. Be sure to break apart any clumps formed by the pumpkin
- Pour the batter into a microwave safe mug or non stick ramekin and top with extra chocolate chips
- Microwave for 1.5 minutes
- Top with a pinch of sea salt (optional) and enjoy!
