Yes! You read it right: NUT FREE VEGAN pesto. So, I am not actually nut free or vegan, but I do not eat dairy which seems to be a staple in pesto. I figured I could make my own that would be just as yummy as any other non-vegan pesto. I wanted to take it one step further and create a recipe that was safe to eat for just about anyone. So many people have sensitivities to nuts in some form or another. My breakfast staple is almond butter, so I’m lucky enough to not be allergic or crazily sensitive to them. I do feel extra bloated on days that I eat too much nut butter, but sometimes I just crave it and there’s no stopping me. Regardless, I wanted to try making nut free vegan pesto, and I have to say that I think I succeeded! This recipe is beyond easy to recreate and it’s just so good! I made it yesterday morning and it’s already all gone. I baked with it, added it to toast, and shared with the fam; they approve. Hope you guys will too! - 3 cups basil
- 2 large garlic cloves
- Juice from 1 large lemon
- 1/3 cup pumpkin seeds
- 1/2 tsp salt
- 1/4 cup avocado oil (or olive oil!)
- Combine all ingredients in a food processor and blend!
- That’s it, seriously 🙂
PRESTO, you’re done. Get it? Like pesto, but a magician… ok I’m done now
