One of my all time favorite flavors for any dessert is orange. No matter the season, orange makes me feel warm on the inside! I love how refreshing an orange cake can be or how simply good an orange cookie is. I have seriously been on a roll with orange flavors recently and this one is no exception. These cookies may be some of the best I have ever made. They are so soft, fluffy, and honestly dreamy. Hence the name. They are gluten free, dairy free, and even vegan. They are so so easy to make so you’re guaranteed to love it. Note: the batter is more on the liquidy side. You can’t roll these cookies into shape, so just use a spoon to pour the batter onto the baking tray into cookie shapes. I always get some confused looks when the batter is that liquidy, but I promise it’ll work. Happy baking and happy eating

Ingredients:

  • 1 and 1/4 cup gluten free oat flour (you can make your own by blending gluten free oats in a food processor into a fine flour)

  • 1/4 cup coconut flour

  • 1/4 cup applesauce

  • 1/4 cup maple syrup

  • 2 tbs coconut sugar

  • zest from 1 orange

  • juice from 1 and 1/2 oranges

  • 1/2 tsp baking soda

  • pinch sea salt

  • 1/2 orange to top (leftover from juicing!) or 1 bar Loving Earth Cheesecake Chocolate Bar

Recipe:

  1. Combine all wet ingredients first. Watch out for any seeds from the orange. You obviously don’t want that in your batter

  2. Add in the dry and mix super well! Make sure there are no clumps of sugar or flour

  3. The dough is very soft, not rollable! So use a spoon to create cookie shapes on a lined tray. They spread a little and rise so leave some room in between each one. Before baking, top with little orange slices or a square of Loving Earth chocolate or any chocolate bar of your choice. Chocolate and orange is such a happy pair

  4. Bake at 350 for about 10 minutes. The tops will become golden brown when they’re ready!

  5. Let cool and enjoy. Store in the fridge to keep them fresh
