Key Lime Pie Matcha Mousse Cups

Combining such great flavors all into one no bake dessert makes me so happy. These little cups are perfect for any occasion and they’re so easy to make. There is no baking involved which makes it even easier! They are gluten free, vegan, and refined sugar free so they really are perfect for everyone. Hope you guys like this recipe as much as I do. Ingredients:

For the Mousse:

  • 1 cup soaked cashews
  • 2 and 1/2 tbsp lime juice (about one lime)
  • 1 tbsp lime zest (from about one lime)
  • 3 tbsp maple syrup
  • 2 tbsp applesauce
  • 3 pitted dates
  • 1 tbsp matcha green tea

For the Cups:

  • 1/2 cup chocolate chips (melted) or 2 bars of chocolate!

Recipe:

  1. Melt the chocolate until it’s smooth and pour into muffin molds. I used a silicone muffin tin that I have and used a spoon to carefully pour the chocolate into the base and then pull some chocolate from the bottom on to the sides to create the cup edges. This keeps the chocolate from pooling into the bottom and creating too thick of a base. Store these in the freezer for at least 20 minutes
  2. Combine the mousse ingredients into a food processor and blend until super smooth. The mixture should not be too liquidy
  3. Once the chocolate cups are frozen, carefully remove them from their liners and fill each one with the mousse filling. Place the cups in the fridge for a few hours to allow the mousse to set even more
  4. Optional: top with bee pollen, sea salt, or slices of lime to decorate
  5. ENJOY
