As a new lover of coffee, I am way too excited to share these. Growing up, I thought coffee was too bitter. I hated the flavor and I didn’t like the way it made me feel. Now that I’m a little older, I REALLY like it. I have been playing around with different types, but to be honest, I don’t know much about it. You know that scene from The Office where someone says “I’ll have one alcohol please?” That’s me with coffee. When I go anywhere to get a cup I might as well be looking a menu in a different language. I do know that when I tried this bottle of cold brew, I knew right away that a new recipe was waiting to happen. I love no bake recipes because they’re just so easy to make and they take no time. I hope you guys like this one as much as I did! Happy no baking lol

Ingredients:

Base:

  • 1/2 cup soaked walnuts

  • 1/2 cup soaked pecans

  • 7 soaked and pitted dates

  • 1 tsp maple syrup

  • 1 tsp coffee

Middle:

  • 1 cup raw almond butter

  • 1 tsp vanilla

  • 2 tbs brewed coffee

Top:

  • 1/3 cup melted chocolate chips

  • 1/4 cup coffee

  • 1 tsp cacao powder

  • sea salt to top

Recipe:

  1. Prepare a square tray with parchment paper. I used an 8×8 brownie tin and lined it with the paper to prevent the layers from sticking

  2. Make each layer separately. Start with the bottom layer, blend until almost smooth and press into the bottom of the baking tin

  3. Then make the second layer. Blend until smooth and press down on top of bottom layer

  4. Melt the chocolate for the top layer and hand mix the other ingredients for this layer. Pour this mixture on top of the other two layers and place the whole thing in the freezer. Optional: sprinkle a little sea salt right on top before freezing

  5. Remove from the freezer, cut into little squares, and enjoy! Serves best with a hot cup of coffee
