Anyone else ever overwhelmed by all the different types of protein powders there are? There are literally hundreds of different brands and hundreds of different kinds with flavors and protein combinations. Since I have such a hard time taking in a lot of protein throughout the week, I try to supplement a little with a good powder. I am constantly in search of a quality brand and it’s safe to say that I finally have. There are so many other great ones out there, some I even use myself, but I highly recommend the one I used in this recipe. This brand is AMAZING because you get to design your ideal powder. You pick the exact ingredients you want. They tailor your powder to you and what you want it for. I just wanted one that was simple and clean that I could bake with or add to my smoothies. Definitely check them out if you haven’t before. I hope you enjoy this recipe! It’s super easy to make, gluten free, dairy free, and full of protein which is perfect as a pre workout or post workout snack or even just as a filling dessert. Happy baking!

Ingredients:

  • 2 eggs

  • 1 1/2 cups oat flour

  • 3/4 cup mashed sweet potato

  • 1/4 cup maple syrup

  • 1/4 cup applesauce

  • 1 tsp vanilla

  • 1 tsp baking powder

  • 1/4 cup protein powder of choice (I used Gainful make your own protein blend)

  • 1/3 cup chocolate chips

  • Optional: drizzle chocolate on top

Recipe:

  1. Prep one small sweet potato by peeling, cutting into smaller sections, boiling, and mashing. Let it cool before mixing it into the batter

  2. Combine all the ingredients into one bowl and mix well. This is a thicker batter, so just make sure that all the ingredients are well mixed

  3. Using a ice cream scooper, scoop out the dough and gently place them on a lined baking sheet

  4. Bake at 350 for about 20-22 minutes

  5. Optional: top with a chocolate drizzle and a pinch of sea salt
