When you eat brownies, the world becomes a happier place. So eat fudgy sweet potato brownies in mini muffin form or in normal soft brownie form to make the world smile a little harder. Enjoy this one
Ingredients:

3/4 cup mashed sweet potato

1/4 cup maple syrup

1/4 cup tahini

1/4 cup coconut sugar
-
1 bar of chocolate melted (Loving Earth Dark Chocolate Bar)

1/2 cup almond flour
-
1 egg
-
1/4 cup cacao powder
-
1 tbsp vanilla
-
1/2 tsp baking soda
-
1/2 tsp sea salt

Optional: top with Loving Earth Salted Caramel Bar
Recipe:

Prepare the sweet potato mash. Peel one medium sweet potato and place it in a pot with water. Bring the water to a boil and cook the potato until it’s soft enough to pierce with a fork. Mash it once it’s soft

Add 3/4 cup mashed sweet potato with the other wet ingredients including the melted chocolate bar. Mix the ingredients super well so there are no clumps left in the potato

Add in the dry and continue to mix well. The mixture should be soft and smooth

Pour the batter into a lined brownie dish or into a mini muffin tray. The batter is perfect for brownies or mini muffins!

Bake at 350 for about 1 hour as brownies or 30 minutes as mini muffins! The bake time can change depending on the thickness, so just check the middle with a toothpick to make sure it’s baked fully
