No Fry Crispy Chicken Nuggets

Chicken nuggets are my favorite savory food, no competition. I grew up getting chicken nuggets and fries at restaurants, they were always my go to item on any menu. You may think this is not a very refined pallet, but let me tell you how excited I got going to restaurants as a child and knowing that I was allowed to order something not so healthy. We ate pretty well at home, so it was always a treat to go out and order a soda and a plate of fries. I loved growing up this way because I learned the importance of having healthier food at home and still having those moments of treats that made the day even better. My parents taught me the importance of food balance without even knowing it (or they probably did, I just didn’t know it at the time.)

However, when I had to give up gluten and most fried foods, I HAD to find an alternative to chicken nuggets. I couldn’t leave them behind in the dust, so I was finally able to make my own and they may be the best savory food I have ever made. They are gluten free, grain free, oil free, and beyond easy to make. I hope you guys love them as much as I do! Happy eating 🙂

Ingredients

  • 10 chicken tenders (organic if you can)
  • 1 cup almond flour
  • 1 egg
  • 1 tbsp lemon juice
  • 2 tsp garlic
  • 2 tsp red pepper
  • 1 tsp salt

Instructions

  1. Cut up the chicken tenders into nugget shapes/sizes. They shrink a little when you bake them, so don’t cut them too small
  2. Place the nuggets in a bowl with one raw egg and 1 tbsp lemon juice and mix together super well. Make sure the egg and lemon mixture coat the nuggets
  3. In a separate bowl, combine the almond flour with the seasoning and stir to evenly distribute the seasoning
  4. One by one, coat the nuggets in the flour mixture. You can press the nugget down in the flour to make sure all sides get well covered. Repeat this step for each nugget
  5. Place the nuggets evenly on a non stick baking sheet
  6. Bake at 350 for about 35 minutes, or until the coating is crispy and golden brown. If you’re not sure if they’re ready, cut one in half to make sure! The bake time differs based on the size of your nuggets
  7. Pair with a sauce and enjoy!
