  • 1 cup blended oats (can sub oat flour, but the consistency won’t be the same)

  • 1 cup hazelnut meal (almond meal works too)

  • 1/4 cup coconut sugar

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 2 tsp vanilla

  • 1/2 cup vanilla yogurt

  • pinch sea salt

  • 1/3 cup chocolate chips or 1 crushed chocolate bar

  1. Make the oat flour by blending 1 cup oats in a food processor. Try to create a powder, but some larger pieces are ok

  2. Combine the dry ingredients together first (leave out chocolate chips) and mix well

  3. Add in the wet and mix to create a thicker batter. Add the chocolate chips in towards the end and mix them in evenly

  4. Using a cookie scooper (or your hands) scoop equal amounts of batter onto a lined baking sheet

  5. Bake the cookie at 350 for about 20-23 minutes or until golden brown

  6. Let them cool, top with an optional swirl of chocolate or even a pinch of sea salt, and enjoy!
