I like to walk the fine line between breakfast and dessert. Is it a cookie? Is it oatmeal? Is it both? This recipe is super simple and easy to make and it really is perfect for any time of the day. The berries on top are totally optional, but they’re a great addition, trust me. If you have any questions, feel free to comment and ask! Happy baking friends.


Ingredients

  • 2 ripe mashed bananas
  • 1 egg
  • 1 2/3 cups gluten free rolled oats
  • 1/3 cup milk
  • 1/2 tsp baking powder
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 1/2 cup mashed raspberries to top (optional)

Instructions

  1. Mash the bananas in one larger bowl until smooth
  2. Add in the wet ingredients and mix well
  3. Add in the dry and mix well to create an even, thicker batter
  4. Pour the batter into a lined 8×8 brownie dish and smooth out the top
  5. Bake at 350 for about 16 minutes or until golden brown on top
  6. Let cool, top with mashed berries, and slice into bars or squares
