If you haven’t noticed by now, I love all things single serve and all things mug cakes. I love how simple and easy they are to make and how basic the ingredients are. I love that you can customize them to fit the mood. Mood for this cake: celebration. Hence, the sprinkles. As I post this, it’s my roommates dogs birthday which, of course, is cause for celebration. It’s also the first day of Fall which, if you know me at all, is my favorite season. So you can bet that I’m making this recipe a few times today…
This mug cake is gluten free, dairy free, and can be made vegan if you use a flax egg. I used no refined sugars to make it, only sweetened by the best coconut sugar! I hope you guys love this recipe as much as I do.

Ingredients

1/3 cup almond flour

1 tbsp coconut sugar

1 egg

1 tbsp almond butter

1 tsp vanilla

2 tsp applesauce

1/2 tbsp sprinkles (you can add more!)
Instructions

Combine all ingredients together in a small bowland mix well

Pour the batter into a non-stick ramekin dish ora large mug
-
Microwave for 1 minute and 30 seconds
-
Top with extra sprinkles and enjoy!
