Sweet Potato Loaf

  • 1 cup mashed sweet potato

  • 3 eggs

  • 1/3 cup almond butter

  • 1/4 cup maple syrup

  • 1/2 cup coconut flour

  • 2 tbsp chia seeds

  • 1/4 cup dairy free yogurt

  • 1/4 cup coconut sugar

  • 2 tsp cinnamon

  • 1 tsp baking powder


  1. Prep sweet potato. Peel and chop one sweet potato and bring to a boil to soften

  2. Mash the sweet potato well and add in the other wet ingredients and stir

  3. Add in the dry and mix well

  4. Pour the batter into a lined baking dish and bake at 350 for about an hour and ten minutes

  5. Remove from the oven, cool, and cut! You can add your own frosting or check out one of mine. Linked at the top!
