I love frosting and I love chocolate and I love muffins so I combined them into one for one of my all time favorite recipes. Hope y’all like it as much as I do! Happy baking friends 🙂

Frosting Filled Chocolate Muffins
Gluten free, dairy free, and refined sugar free

Servings: 8 muffins
Ingredients
Muffin Batter:
- 1 cup almond flour
- 1/2 cup brown rice flour
- 1/2 cup dairy free yogurt
- 2 eggs
- 1/4 cup maple syrup
- 2 tsp vanilla
- 1 tsp baking soda
- 1/3 cup melted chocolate chips
- 3 tbsp applesauce
- 2 tbsp cacao powder
- pinch of sea salt
Frosting/Filling:
- 1 cup mashed sweet potato
- 1/4 cup dairy free cream cheese
- 1 tsp vanilla
- 1/4 cup maple syrup
- 1/3 cup almond butter
Instructions
- Make the muffin butter by combining all wet ingredients first. Mix well to break apart any clumps
- Add in the dry ingredients and stir as you add to keep the flour from sticking together
- Using a lined or non stick muffin tin, pour about two to three tbsp batter into 8 containers
- Make the frosting by mixing together all the frosting ingredients super well. Feel free to use a blender to get a smooth frosting
- Add 1 tbsp frosting into the center of each one. Try to keep the frosting just in the center
- Add another tbsp or two of batter on top of the frosting. You may need a little extra on each one to cover up the frosting filling
- Bake the muffins for about 40 minutes at 350 degrees
- Let them cool and add more frosting on top! Enjoy 🙂
