No Bake Gingerbread Cake Balls

Ingredients

  • 1/2 cup almond butter (or any other nut butter works too!)

  • 1/4 cup and 2 tbsp coconut flour

  • 1/4 cup maple syrup

  • 1/2 cup melted chocolate chips

  • gingerbread seasoning (1/4 tsp cloves, 1/2 tsp ginger, 1 tsp cinnamon)

Instructions

  1. Combine almond butter and maple syrup together and mix super well

  2. Add in the gingerbread spices and coconut flour and mix well. The batter should be thick and easy to mold. If the mixture is not thick enough, add a little more coconut flour to thicken and firm up

  3. Form the dough into 1 tbsp sized balls and chill in the freezer for about 15 minutes

  4. While the balls are chilling, melt the chocolate chips

  5. Cover the balls in an even layer of chocolate, use a fork to help drip off any extra chocolate

  6. Before the chocolate hardens, sprinkle on sea salt so it sticks

  7. Chill in the fridge and enjoy!
