Ingredients

  • 1/4 cup almond flour

  • 1/4 cup applesauce (can sub an egg)

  • 1 cup coconut sugar

  • 1 cup smooth almond butter

  • 1 tsp vanilla

  • 1 tsp baking soda

  • 1/2 cup chocolate chips

  • 1/3 cup mini marshmallows

Instructions

  1. Combine all wet ingredients first into a bowl and mix well to create a smooth batter

  2. Add in the dry (leave out chocolate chips and marshmallows for now) and mix well, the batter should start to thicken. I used my hands towards the end to make sure the flour was well integrated

  3. Hand mix in the chocolate chips

  4. Roll the dough into even sized balls and place on a non-stick baking sheet. Make sure you leave space in between each of them because they will spread a lot

  5. Before baking, press the mini marshmallows into the top of each cookie. I did about 3 to 4 for each one

  6. Bake at 350 for about 15-20 minutes. Check for golden brown edges!

  7. Cool and enjoy!
