Ingredients:

  • 1 1/2 cups almond flour

  • 1 cup mashed japanese sweet potato

  • 1/2 cup smooth almond butter

  • 3 eggs


  • 1/3 cup maple syrup

  • 1/2 tsp vanilla

  • 1 tsp baking soda

  • 1/2 tsp sea salt

  • 2 tbsp rainbow sprinkles

  • 1/2 cup vegan marshmallows

Instructions:

  1. Peel, cut into chunks, and boil one sweet potato. You can use a regular sweet potato, but I had japanese on hand which made the blondies a more white color than orange

  2. Poke the chunks with a fork to make sure they’re soft and ready to mash. Once ready, strain the potatoes and mash as much as you can. Measure out 1 full cup of the mash and pour into a seperate bowl

  3. Add in the other wet ingredients and whisk well to create a smooth, well combined mixture

  4. Add in the dry and mix well to create a thicker batter

  5. Pour in the marshmallows and the sprinkles and mix well into the batter. Make sure these add ins are evenly distributed

  6. Pour the batter into a lined 8×8 baking dish and smooth out the top. Optional: sprinkle marshmallows and more sprinkles on top before baking

  7. Bake at 350 for about 40-45 minutes or until the top is golden brown and the inside is perfectly cooked

  8. Cool, cut, and enjoy!
