Whenever I see anything s’more related, it reminds me of my childhood. I grew up a Girl Scout and I can always think back to campfires and s’mores. I remember sitting around with my friends and eating upwards of 4 or 5 s’mores and then, on a sugar rush, staying up half the night telling ghost stories.

While my Girl Scout days are long over, my s’mores days definitely are not. There is seriously nothing better than melted marshmallow, on melted chocolate, on a sweet graham cracker. I’ve obviously had to modify a little and make my own versions these days with dairy free chocolate and gluten free graham crackers, but I think I’ve made it work pretty well!


Feeling inspired by all these memories lately, I’ve been making all the s’mores themed desserts. This was the continuation of many and I made an almond flour based PERFECT cookie full of s’more bests. It’s a recipe that was gone before I could even put it in the fridge. It may be one of the best things I’ve ever made. As an added bonus, its gluten free and dairy free and you would never know it! Hope you guys love it as much as I did! Happy baking

What goes in a healthy s’mores cookie?

  • Egg

  • Honey

  • Almond Flour

  • Lemon Juice

  • Vanilla

  • Baking Soda

  • Sea Salt

  • Olive Oil

  • Marshmallows and Chocolate Chips of course!

Overall, they have very minimal ingredients so when you make them and you get an incredible cookie, you wonder how they are so good!

Tools needed to make these healthy and simple cookies:

This recipe requires minimal ingredients and, in return, very few kitchen utensils. All you need to make this recipe is a baking tray, parchment paper, a bowl, and a mixing utensil. I love to use a fork to mix the batter, but a whisk would probably work better if you have one! TIP: you can use an ice cream scoop to measure out even amounts of cookie dough per cookie.

How to make s’mores cookies:

Preheat your oven to 350F and line a baking tray with parchment paper.

Mix the wet ingredients of the batter together first in one bowl and stir well to create an even batter. The wet ingredients are: egg, olive oil, honey, vanilla, and lemon juice.

Next, add in the dry ingredients: baking soda, almond flour, and sea salt and mix well!

Once your cookie dough is mixed well, add in your mini marshmallows and chocolate chips and mix into the batter.

Use your ice cream scoop to measure out even amounts of cookie dough to create 11-12 cookies. Roll each cookie into a ball and gently flatten to create a cookie shape. Top each cookie with a few chocolate chips and mini marshmallows.

Bake your cookies for about 15 minutes or until perfectly golden brown.

Chill and enjoy!

Substitution options for the perfect s’mores cookies

When it comes time to make your delicious cookies and you find that you don’t have olive oil on hand, don’t panic! It can be substituted with an ingredient that you most likely already have in your pantry. Here are some simple swaps for olive oil, as well as other ingredients!

  • Olive Oil: This oil can be easily substituted for any other type of oil you have on hand! You can use coconut or avocado as examples.

  • Egg (vegan): For egg-free, vegan s’mores cookies, feel free to use apple sauce (1/4 cup) or ground flax seeds. If using seeds, mix 1 tablespoon of seeds with 3 tablespoons of water. Whisk until the water is absorbed and a gelatinous consistency is achieved. Then, stir into your batter as directed.

  • Honey: In place of honey you can use molasses or maple syrup. Using either will slightly altar the taste and texture, though it shouldn’t be detrimental to your recipe. Look up the conversion specific to your brand.

  • 1/2 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch sea salt
  • 3 tbsp olive oil
  • 1/3 cup mini marshmallows
  • 1/3 cup chocolate chips of course!
