Cinnamon Sugar may be one of my all time favorite flavor combinations. I don’t know if I just love the flavor on it’s own or more of what it represents. Whenever I smell cinnamon I immediately think of Fall days. I love everything associated with this time of year like the temperatures and the sweaters, but I especially adore the food.

I was never a huge soft pretzel gal, but there’s something special about holding a pretzel on a cold fall day, maybe with a warm cup of tea or coffee in tow. Since I can’t eat the usual store bought pretzel, I’ve had to improvise and make my own. This recipe took a little more testing than I’m used to, but I was not about to give up on this delicious cinnamon sugar combo. I think this final recipe turned out perfectly. I hope you guys love it as much as I do!

This pumpkin cinnamon sugar recipe is filled with everything good. It’s cozy, warm, filling, and topped with a delicious chocolate drizzle for even more sweetness. It’s the perfect snack or breakfast (because who doesn’t love starting their days with a warm pretzel?).

Ingredients used in this cinnamon sugar pretzel recipe


In these pretzels, we’ll be using a variety of ingredients like pumpkin puree, maple syrup, and oat flour. Everything has been chosen to make these pretzels as soft and melt-in-your-mouth delicious as possible!

  • Oat flour
  • Coconut flour
  • Baking powder
  • Baking soda
  • Cinnamon
  • Pumpkin spice (optional)
  • Sea salt
  • Apple cider vinegar
  • Pumpkin puree
  • Almond milk
  • Maple syrup
  • egg, cinnamon, and coconut sugar for the coating on top 🙂

Kitchen tools that you’ll need

To make these pretzels you’ll need a variety of baking items. Five, to be exact! Here’s what you’ll need to grab before you get started:

  • Large mixing bowl
  • Stirring utensil
  • Parchment paper
  • Baking sheet
  • Silicone brush

For measuring out the ingredients, you’ll need: 1/2 tsp, 1 tsp, 1/4 cup, 1/3 cup, 1/2 cup, and 1 cup.

How to make pumpkin cinnamon sugar pretzels

  1. Combine all the wet ingredients for the pretzel batter and mix well. These ingredients are: apple cider vinegar, pumpkin puree, almond milk, and maple syrup. Whisk to break apart any clumps in the mixture.
  2. Add in the dry ingredients into the mixture and mix well to create a thick batter. These include: oat flour, coconut flour, cinnamon, pumpkin spice, baking powder, baking soda, and sea salt.
  3. Once your batter is ready, measure out even amounts of the dough, and begin to create the pretzel shape. Roll into long snake like shapes, and gently twist to make the pretzel shape. Take this step nice and slow and be patient, I promise it works!
  4. Optional step: crack an egg into a bowl and mix it. Use a brush to gently coat each pretzel with an egg wash. Sprinkle a little cinnamon and coconut sugar on top of each pretzel.
  5. Bake for about 15-18 minutes or until they become golden brown.
  6. Drizzle with chocolate (also optional, but not at the same time…)
  7. Enjoy!
