Ingredients

1 cup almond flour

1/4 cup and 1 tbsp arrowroot

1/2 cup almond butter

1/3 cup maple syrup

1 tsp vanilla

1 tsp cinnamon

1 egg

1/2 tsp sea salt
For the Coating

2 tbsp coconut sugar
-
1 tbsp cinnamon
Instructions

Combine all ingredients for the cookies into a bowl and mix well. The dough should be thicker and easy to mold

In a separate bowl, combine the sugar and cinnamon and mix well

Roll the dough into even sized balls and roll into the cinnamon sugar mix, coat the entire cookie
-
Flatten the cookies onto a non-stick baking sheet, they won’t rise or spread much
-
Bake at 350 for about 15 minutes. I like them soft, but feel free to let them bake a little more if you feel they’re not ready
