How to make chocolate crinkle cookies
In your large mixing bowl, combine your wet ingredients: avocado oil, eggs, and vanilla. Whisk well.
Next, add in your dry ingredients to create your cookie dough. These ingredients include: cocoa powder, coconut sugar, sea salt, baking powder, and almond flour. Mix all ingredients super well to create a thick, chocolatey dough.
CHILL YOUR BATTER. This step is super important. It will be super hard to roll your dough into balls if the batter isn’t chilled. Chill for about an hour!
Preheat your oven to 350F and line your baking tray with parchment paper.
On a small plate or extra parchment paper, pour about 1/2 cup powdered sugar. Begin to roll your dough into evenly sized balls (about 1 1/2 tbsp per ball) and then coat each in a thick layer of powdered sugar. See image below for example.
Place on a baking tray, leaving a little space between each ball. You should be able to make about 28 small cookies. Press each one down just a little, not too much!
Bake for about 15 minutes or until big crinkles start forming. Cool and enjoy along with a hot cup of your favorite beverage.
